Our favorite way to prepare these potatoes (especially the colorful ones!) is simply seasoning and roasting! Any of our potato varieties can be used to make this recipe except the russets, which are a fluffy baking potato generally too soft for frying. The recipe below serves 4 and is adapted from cookwithwhatyouhave.com.

Roasted and Seasoned Potatoes


2 lb red, white and blue mix potatoes (or any variety you like!)*

2 tablespoons olive oil*

1 teaspoon Jacobsen sea salt (try one of the gourmet flavored salts for an extra kick of flavor!)*

1/4 teaspoon black pepper*
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 teaspoon onion or garlic powder (optional)

Preheat oven to 400 degrees with a sheet pan in the oven. Preheating your sheet pan will cook the potatoes more quickly and help them get crispy.
Put the potatoes in a bowl. Mix the spices/salt in a small bowl and then toss with the potatoes and then add the oil and toss again. Remove the hot sheet pan from the oven and spread the potatoes on the pan in one layer. Roast for about 25 minutes, tossing once halfway through, or until tender and slightly crispy. Serve as is or with ketchup or favorite dipping sauce.
